The earthy, Thai flavors in this RED CURRY TOFU SUPERFOOD RICE BOWL are simply incredible! These bowls are chock full of so many wonderful things – tons of fresh veggies, warm, comforting jasmine rice, and my favorite way to prepare tofu thanks to BLUE ELEPHANT RED CURRY SAUCE.

Not only are these bowls METRO-BILLY delicious, but they’re also INCREDIBLY quick to prepare, clocking in at just under 30 minutes…. making it the GO-TO for any weeknight family meal. Thump thump.

RED CURRY TOFU SUPER FOOD RICE BOWL

SERVES 4 | PREP AND COOK TIME 30 MINUTES

INGREDIENTS

1 cup BLUE ELEPHANT Jasmine Rice

1 tablespoon sesame oil

1/2 teaspoon sea salt

8 ounces firm tofu, cubed

1 10.6 ounce BLUE ELEPHANT Red Curry Sauce

1 lime, juiced

1 cup whole kernel corn, roasted

1 cup shredded carrots

2 avocados, sliced

1 cup mung bean sprouts or beet micro-greens

2 cups shelled edamame

 

TECHNIQUE

Preheat oven to 400 degrees.

Rinse the BLUE ELEPHANT Jasmine Rice, then add to a small pot over high heat along with 2 cups water, sesame oil, and the salt. Bring to a boil, then reduce the heat to low, cover, and cook for 15 minutes.

While the rice cooks, whisk together or blend the BLUE ELEPHANT Red Curry Sauce with lime juice until smooth, then in a medium sized mixing bowl, coat the cubed tofu with the Red Curry-Lime mixture. Spread the tofu evenly across a sheet pan with parchment, then place in oven for about 15 minutes, until extra firm to the touch. Remove and set aside.

To assemble the bowls: spoon the jasmine rice into four bowls, then top with the red curry tofu, carrots, avocado, corn, bean sprouts or beet micro-greens, and edamame. Serve and enjoy.

 

Time an issue? BLUE ELEPHANT Premium Red Curry is also a great alternative for those busy weeknights when there’s little or no time for dinner. Preparation is easy as 1, 2, 3!

1) In a saucepan, add 1 pouch (10.6 oz.) of curry sauce and 1/2 cup of water. Bring to a boil.

2) Add whole shrimp (12 oz.) or any protein of your choice. (and more vegetables if you desire). Simmer until shrimp is cooked completely.

3) Serve with Blue Elephant Jasmine Rice. Enjoy.
